Asian Noodle salad for a crowd

I am not much of a "rice" person. I am supposed to be one since I am ethnic Southern Chinese, we are supposed to be a rice eating culture. In old China, rice grew in the south while wheat in the north. It dictated the starch of each of the group. I always love noodle, any noodles, hot, cold, soup, pan fried or simply tossed with oyster sauce and shoyu. It is my ultimate comfort food.

Here is a recipe that I made from time to time in the summer, it requires a little bit of cooking - making the noodle. There is a bit of chopping and cutting, otherwise it is a simple recipe.  It is a great summer dish for a pot-luck. This is why I am making this!

My big Samoa braddah introduced me to a Chinese BBQ  Hiep Thanh BBQ and Deli  in Brooklyn Park,  North Minneapolis. It is ran by a Vietnamese Chinese family. The nicest people and great food too! They makes Char Sui, Chinese roast pork. I got some for this salad. You can always replace the meat with rotisserie chicken. I make this vegan sometime with no meat at all. I would however replace the meat with julienne carrot, pea pods and celery.

As with the dressing, you will notice I am using a few South East Asian herbs and spices, my other "Southern" root. Lemon grass, galanga and keffir leaves are all favorites of Thai, Indonesian and Malaysian cooking. I am very luck to have a keffir plant. If fresh is not available in your Asian store, check the frozen food section, you may find it there.

You will also notice that I am not salting the noodle or the vegetable. I found the salt draws too much moisture out of the the vegetable. I would rather keep the vegetable crispy and let the dressing carries the saltiness. It will balance out once you have everything tossed together.

If you decide to make ahead, separate the noodle vegetable mix and the dressing on the side, toss when ready to serve. If you are going to make it a day ahead, please chop and mix in the herbs with you are able to serve. The herbs will loss its flavor if they are cut and store overnight.

Summer Asian Noodle Salad

1 lb bag precooked Hong Kong style Shanghai noodle, you can also use Filipino Pan cit here too.
1/2 lb (about 1 cup shredded) Chinese Char Sui - BBQ pork or other kind of meat of your choice. shredded or julienned.
1/2 a nappa cabbage, shredded
 
1 cup bean sprout, rinsed and cleaned
1 red bell pepper, cleaned, remove stem, seed and julienne
1 cup seedless cucumber (about 1 English cucumber), cleaned and julienne
1/2 cup chopped green onion
1/2 cup chopped cilantro, save a few sprig for garnish
1/2 cup roughly chopped Thai basil save a few leaves for garnish
1/4 cup roughly chopped mint, save a few sprig for garnish.
2 fresh keffir leave (option), thinly shredded
Dressing
1 cup peanut butter
1/4 cup Japanese rice vinegar
Juice of 1/2 a lime
1/4 cup palm sugar or light brown sugar
1 tbsp shoyu
1 tsp crushed garlic
1 tsp galangal powder
 

1 tsp grated lemon grass, I am using frozen product from the Asian store, you can find it in the frozen vegetable section.
2 Tbsp sesame oil
Salt and pepper

Topping
1/2 cup chopped roasted peanut
1 bag of fried plantain, crushed or fried crunchy noodles
Directions
Dressing:
In a large  measuring cup, mix peanut butter with crushed garlic
Add in a tsp of grated lemon grass
Add in juice of 1/2 a lime, it will be become very thick, this is why I am using a spatula to mix.
Slowly drizzle in the vinegar, keep mixing.
Once the dressing is "thinned" out, switch to a whisk to make sure the dressing is as smooth as possible
Finally whisk in sesame oil and shoyu. Taste and season with pepper or more shoyu as need. It is OK to have it a bit saltier than usual since we are not salting the noodle and the vegetable. Correct seasoning to taste, you may want more sugar or salt.
Cover and chill in the fridge to blend the flavor

Salad:
In a large pot, bring to boil 6 cups of water. Drop the noodle in the water to reheat and "wash".
 
Remove from heat once the noodle comes to a boil

Drain and rinse the noodle under cold water. Unlike Italian cooking, we need to remove the starch from the Asian noodle, it will have a crisp feel to it. Drain and set aside.

Place bean sprouts, cucumber and red pepper in a salad spinner, remove as much water as possible with couple of "spin cycles". Repeat the same process with the cabbage to remove the water.
Place the noodle and cabbage in the large bowl, pour in 1/3 of the dressing, toss to coat.
 
Add bean sprout, cucumber and red pepper
Toss in the herb mix
Toss in another 1/3 of dressing
 Add the meat if desired. Toss well
Pile the noodle in a large serving bowl. Drizzle the rest of the dressing over the top.  Chill in the fridge for about an hour. You can have the toppings served on the side or sprinkle on the dish just before serving.
Garnish with a few herbs.

Serve 8 as a main course for good eater. You can always half the recipe. The dressing can be keep in the jar with a tight lid in the fridge. Use within a week.

Classic India Kheer - Kūlia's version of India rice pudding

Did I mention my yoga teacher has not been well?  I have been helping out by making her renal friendly meals as much as I am. She is finally off dialysis. To celebrate, I made her favorite dessert, Kheer, India rice pudding. This recipe is time consuming, but with a little  aloha, you will bring someone a big hug and a smile

Classically, the spices are usually are simply added to the milk whole and left in the pudding. I don't really care for fishing all the spices out nor enjoy having little hard pieces of cardamon in my mouth. I prefer to have the spices in a bag so that I can easily remove the packet when the cooking is done. I also added in dried roses to add more floral note. However if you prefer less, just skip adding the roses to your spice pack.

As with the roses I use here. I am using dried roses. Please make sure they are for consumption. I am using roses for tea. You will find them at any co-op bulk section. You can also get them from tea shop, please make sure you only want the roses without tea leaves.


Classic Indian rice pudding with  rose petal "dust"
1/4 cup  basmati rice, washed and drained.
1 Qt or 5 cups 1% milk, (Full or 2% is fine too)
1 tsp of cardamon pod
1 small piece of cinnamon
1/2 tsp whole all spice
1 tbsp dried roses
1 tbsp rose water
1/2 cup sugar
Rose petal Dust:
4 tbsp dried roses
Direction
Prepare a spice pack by combining cardamon, cinnamon pieces, clove and roses
Place the spices in a tea bag or tea ball.
In a large pot, add milk and bring to a boil
Add rice and the spice packet
Bring to a boil, low heat to medium low and let it simmer.  Stir constantly till the liquid reduce by half, about 1 hour. Please remember to stir or it may burn on the bottom.
Check the consistence of the pudding. Cook until the mixture has a thick porridge consistence. 
 Remove spice pack. Add sugar, stir till dissolve. Bring the pudding to simmer for additional 5 min. Keep stirring.
 When it's thick and coat the back of the spoon, add 1 tbsp rose water. 
Cover and ready to serve. Ladle into small bowls, sprinkle with rose petal.
Can be serve hot or cold. If you prefer a cold pudding. Transfer the mixture to a large bowl. Press a piece of plastic wrap onto the surface of the pudding. This will prevent a film to form. 

Make 12 small serving or 6 large one.

To make the rose petal dust
Remove any stem from the rose blossom. Crush the leaves as much as possible.
Place the crushed petals in a spice grinder.
Process till fine. I leave a few larger pieces to give it a more rustic look
The rose dust can be store in an airtight jar with the rest of the spices.

Garbanzo bean and cucumber salad for a hot summer day

There is no question summer is here. Our temperature hits 98 degrees F today. When I left my office, my car is really 102. With 70% humidity, this is no island weather. I would say this is closer to summer in Central, Hong Kong verse Honolulu or Singapore.

Summer is also a busy time. Mr Wonderful and I try very hard to get to his lake place in Northern Minnesota. It's peaceful and we enjoy taking the boat out on the lake and spend a day of doing nothing.

Cooking is always an issue at the Lake. It's a very small place and I try not to "heat" up the place too much. We tend to grill a lot and use the grill burner for most of our meal. He is always thoughtful that he would do all the cooking. Lake time is supposed to be "do nothing" time. I need to come up with a few things that we can "grab and go" for picnic on the boat.

Here is one that we will be having this week. It is a simple recipe that requires minimal cooking. It can be adapted to be cooked outdoor. This is also a great made-ahead meal. I made a vegan recipe here. Mr Wonderful has been a good sport that he eats whatever I feed him. I will change this back to a meat-eater version by adding up cut rotisserie chicken breast. I am pretty proud to say that he has never eaten so much vegetable in his life and he is not complaining... yet...

Summer Garbanzo beans and cucumber salad

2 can of garbanzo beans, drained thoroughly
6 small persian cucumber or 2 seedless English cucumber, diced into 1/2" pieces
1 tsp fennel seeds
1 tsp caraway seeds
1 tsp thyme
1 medium onion - chopped
1 tsp crushed garlic
Juice of 1 lime
1 tsp maple sugar or honey (to taste)
1 tbsp balsamic vinegar
1/4 cup good olive oil
Salt and pepper to taste

Directions
In a medium size pan, heat a couple tbsp olive oil. Add garlic, fennel seeds, caraway seeds and thyme over medium heat
Let the spice toast up while the onion become translucent
Toss in gabanzo beans. Lower heat to low and let it cook for a few mins to let the liquid from the bean dry up. Season with salt and pepper. Remove from heat and let cook for 5 mins.
In a small bowl, mix lime juice with sugar. Stir unless dissolved and mixed in
Drizzle in olive oil. Whisk/mix well. Add balsamic vinegar. Season with salt and pepper
Transfer the beans to a large bowl, toss in cubed cucumber
Drizzle the dressing over the salad. Mix well. Refrigerate the salad for about an hour to  let the flavor blend.
Serve as a side dish or a main course with some toss greens

To make this more filling for non-vegetarian, add 1 cup of chopped store bought rotisserie chicken with the cucumber. Drizzle with dressing and refrigerate.

Serve 6 as a main course

Simple crock pot Mac & Cheese for someone special

A few months ago, my best friend/sister Gigi asked me for a Mac and Cheese recipe. My "niece" Denise wanted a hot lunch for school instead of sandwiches. I know Gigi is one who enjoy simple goodness. I have been doing some reading and a few experimenting, finally, I came up with a almost perfect mac and cheese.

It is not necessary to boil the noodle, no extra pots and pans. Gigi used to laughed when she saw the amount of pots and dishes I created when we used to cook together when we were in Hawai'i.
The only cooking device here is a crock pot (slow cooker) and a measuring cup and a knife. (Ok, you may need a measuring spoon too, I cook with the "eyeball" method most time.)

Fun and Simple Crock Pot Mac & Cheese
1 lb large elbow macaroni
4 -5 cups 1% milk
4 tbsp butter, cut in to small pads
3 cups shredded cheddar, or cheddar cheese mix. I am using a Jack and cheddar mix.
4 oz Brie, cut into small pieces
1/2 tbsp garlic powder
1 tbsp Herb de Provence
Salt and pepper to taste.

Direction:
Spray or oil the side of a 6 Qt crock pot
Place macaroni in pot. pour in 4 cups of milk.
Place butter pads next
Add cut up Brie cheese, rind and all
Top with shredded cheddar cheese
Stir to mix
Sprinkle Herb de Province and garlic powder, stir to mix well again. Season with salt and pepper
Turn the crock pot on low heat and let it cook for 3 hrs. Stir and check the consistency, it seems too thick for you liking, add more milk. We like a little "sauce" with ours.  Check the seasoning, the amount of salt you need will depend on the cheese you use. If you like,  you can sprinkle addition cup of cheese on top.
Cover and let it cook for an additional 1 hour.

Plate the pasta and top with chopped parsley and freshly grounded pepper!

Gigi and Denise - this is for you!

Make 12 serving. You can freeze some of it. If you have a smaller crock pot, you can make 1/2 portion. I would not recommend making a 1/2 recipe in a 6 Qt pot.

If you want to make this very gourmet, replace the brie with a Taleggio. You can also mix in grated mozzarella with the cheddar and a couple tbsp grated Parmesan cheese.

If you would rather keep this simple, replace the brie with cream cheese to make it all American.

This is a very simple dish that you can have fun with, try it with different combination of cheese!

This is also a great pot-luck dish. You can keep the casserole on warm in the crock pot. Simple!

Big in flavor and renal friendly cooking adventure

My beloved yoga teacher has not been well. She is on a strict renal diet. For all the she has done for me and be there for me through the years, the least that I can do is to do some cooking for her. I know she loves to eat, I have been experimenting and creating different dishes that are low in potassium and phosphorus. I am very surprised how limited the diet can be and how fun it is to come up with ideal to replace one for another. I didn't post any recipe, however if you are interested in any of these dishes , please let me know and I will sent you the recipe.


Korean inspiration dinner to go
Momi like Korean food. I made a simple stir fried mix vegetable and a mock-beef strips cooked in shoyu and mirin sauce. I separated the 2 elements to make reheating simpler. The small green container is not spinach. It is a renal friendly version of the classic Korean spinach or watercress side dish. I lightly sautéed some arugula, toss with the classic Korea seasoning of shoyu, pepper and a splash of sesame oil.

India Kheer inspired frozen dessert with rose petals
Momi loves Kheer, India rice pudding, dairy is off her current diet list. I used rice milk and the spices, rose petal to create a frozen dessert that has the taste of Kheer. The trick here is to thicken the rice milk with cornstarch to give it that creamy "ice cream" like texture

Orzo salad with cucumber and red pepper with a basil dressing 
Summer is finally here, I noticed that Momi pinned a quinoa salad recipe on her Pinterest. I wanted to create something similar by using orzo as the "grain", replace the tomatoes with red pepper and elevate the taste by combining basil and Italian parsley in a light vinaigrette.

Lilikoi (passion fruit) tapioca pudding with a burnt sugar crust 
Another version of pudding. This time with rice milk and tapioca. The rice milk lack texture and the tapioca does not bring much richness, so I added eggs to give the pudding the richness.

 Very simple Asian noodle salad
Momi is vegetarian, this is a very simple noodle salad with julienned carrot, celery, green onion and Asian 5-spice tofu for protein. The dressing is a simple vinaigrette with a splash of sesame oil. I usually would make this dish with a peanut dressing, but nuts is off limit for her.

You will actually find this recipe here, it is just my fried rice with vegetable topping. I added an extra egg in the rice to make sure she had enough protein in her diet. The vegetable topping here is a mixture of chopped asparagus, cabbage and soy crumble. (Rinvented Old Fashion Chinese "Vegetable Rice"

Renal friendly Classic India rice pudding
This is the 1st recipe I experimented with. I replaced the milk with rice milk. It is a much lighter version. but still have all the flavor and bold taste of a classic kheer.
